Now that it is the peak of summer time, I thought I would add some salads to my blog. Some of these recipes are so simple that they cannot be justified as one single post, even on a site that posts easy recipes. These salads are easily paired up with most meals as an accompaniment, and some of them can even be a meal by itself. The following recipes do not have exact measurements, I leave it up to you to decide on the quantities. Please feel free to write to me, if you think that you need to know more details on any of the recipes.

1) Farfalle Salad with Home-made Vinaigrette

Ingredients Dressing for Vinaigrette
Farfalle Pasta Honey
Cherry Tomatoes Lemon Juice
Peas Dill
Corn Dijon Mustard
Garlic
Olive Oil
Method
Boil the pasta, and drain. Set aside to cool.
Add the tomatoes, peas and corn to the pasta.
Mix the lemon, dill, garlic and mustard in a blender with 2 Parts Olive oil.
Then add honey to the mixture.
Toss the vinaigrette with the chilled pasta and veggies. Add some salt if  you desire.

2) Spinach Salad with Sautéed Onions and Croutons

Ingredients Dressing Options
Spinach Ranch
Rocket Blue Cheese
Onions Thousand Island
Garlic Croutons
Method
Slice the onions, saute in a little olive oil. Add a pinch of sugar.
Wash the Spinach and Rocket Leaves.
In a big bowl add the leaves with the onions and the croutons. Top with dressing of your choice.

3) Light Greek Salad

Ingredients Dressing
Lettuce Fresh Basil Leaves
Spinach Oregano (dried is fine)
Cucumber, sliced Olive Oil
Black Olives, sliced Salt & Pepper
Red Onions, sliced
Feta Cheese
Method
In a blender combine all the dressing ingredients.
Mix with the salad ingredients except for the feta cheese.
Crumble the feta cheese on top.

4) Simple Potato Salad

Ingredients Dressing
Potatoes Mayonnaise
Eggs Red Pepper, diced
Spring Onions Salt & Pepper
Method
Boil the potatoes and eggs. Peel and chop them.
Dice the spring onions into small pieces. Add the red pepper.
Combine all the ingredients and toss with mayonnaise, season with salt and pepper.

5) Three Bean Salad with Vinaigrette Dressing

Ingredients Vinaigrette Dressing
Can of Cannellini beans, rinsed and drained Olive Oil
Can of Kidney beans, rinsed and drained Red Wine Vinegar
Can of Chickpeas, rinsed and drained Lemon Juice
Red onion, chopped fine Dijon Mustard
Fresh Parsley, finely chopped Garlic
Method
In a big bowl combine all the beans, red onions and parsley.
Toss the salad with the dressing ingredients. Season with salt & pepper.

6) Pan Seared Tuna Salad

Ingredients Dressing
Fresh Tuna pieces Garlic, crushed
Leeks Olive Oil
Tomatoes Salt & Pepper
Lettuce Italian Herbs
Basil
Method
Season the Tuna and Pan sear it,( use canned tuna, if you are short of time).
Cut the tuna into bite sized pieces. Chop up the leeks, tomatoes and lettuce.
Remove the stems from basil. Put all the ingredients in one bowl.
Toss the salad with all the dressing ingredients.

7) Simple Tomato Salad

Ingredients Dressing
Tomatoes Olive Oil
Fresh Coriander Red Wine Vinegar
Onions Worcester Sauce
Green Onions Italian Herbs
Method
Chop up all the ingredients into small pieces.
Toss with all the dressing ingredients. Season with Salt & Pepper.

8) Sliced Turkey Salad

Ingredients Dressing
Savoy Cabbage Pesto Sauce
Romaine Lettuce Olive Oil
Beans Salt & Pepper
Sliced Turkey
Method
Chop up the cabbage and lettuce into thin slices.
Rinse and drain the beans. Add to the cabbage and lettuce.
Toss with the dressing and arrange the turkey slices on top.

9) Avocado & Mixed Veggies Salad

Ingredients Dressing
Avocado Olive Oil
Peas Salt & Pepper
Carrots
Corn
Green Beans
Lettuce
Onions
Method
Sauté some onions. Set aside.
(I used frozen vegetables, so the next thing I did was to defrost the veggies)
Peel and chop up the avocados. In a bowl mix the veggies, onions and lettuce.
 Toss with the olive oil and season with salt and pepper.

10) Steak Salad

Ingredients Dressing
Steak pieces, cooked Garlic, crushed
Mushrooms Peppercorns, crushed
Broccoli Slaw Cream
Red Wine
Method
In a pan, heat up the oil, add the garlic and peppercorn, fry for a minute.
Add the mushrooms, saute till it softens and add some cream and red wine. Set aside.
Arrange the broccoli slaw on plate, place the steak pieces on top.
Pour over the mushroom sauce.
