Summer is officially here, loving the fact that I can just go out without a jacket. Everyone on the streets are smiling and more friendly. I definitely believe weather has a lot to do with people’s moods, I actually saw the biggest difference when I used to live in England! On the sunny days you were definitely more likely to get more people helping you out.
I thought I would start of the summer season with some of these yummy sticky chicken drumsticks. perfect for hosting the game nights, while the WORLD CUP is going on. Football or Soccer as Americans say it, is definitely my favourite sport to watch, it’s the only sport I would watch by myself. If other sports come on TV, I am most likely to change the channel. This probably stems from spending so many years in jolly old England. I have taken the original recipe from Gordon Ramsay and added a few tweaks of my own. I definitely don’t like sweet poultry or meat, so I have used a lot less honey than the original recipe but added some heat to increase the oomph! Hope you enjoy it! 🙂
8 Chicken drumsticks
3 Tbsp Honey
3 Tbsp Fish Sauce
2 Cloves Garlic
1 ½ Tbsp Soy Sauce
1 Tbsp Lemon Grass paste
1 Tbsp Red Chili flakes
3 Tbsp Rice Wine Vinegar
1 ½ Tbsp Sesame oil
Heat the oven to 400 F.
Lightly oil a large baking dish.
Season the drumsticks with salt and pepper and arrange in the dish in a single layer.
Drizzle over a little olive oil and bake in the hot oven for 20 minutes.
While the chicken is cooking prepare the glaze by mixing all the other ingredients in a food processor and make a smooth glaze.
Take the chicken out of the oven and pour over the glaze, to coat each drumstick.
Cover with foil and Return to the oven and bake for another 20-30 minutes. Turning several times, until the chicken is tender and nicely glazed.\
Let the chicken rest for a few minutes before serving. I served with creamy mashed potatoes and roasted vegetables.
