Now that winter is over, I need to think about getting in shape for the summer. I made this salad with some leftover Turkey, but chicken can be used as well. This is a great way to eat a healthier meal after pigging out on a big feast, the night before.

Spring Turkey Salad

Ingredients

1 Turkey breast, cooked and sliced into strips

1/2 head of romaine

100 gm Mushrooms (thinly sliced)

1 tomato, (cut into 1/2-inch pieces)

2 hard-boiled large eggs, finely chopped

2 Spring Onions, chopped

1/2 cup finely grated low fat Cheddar Cheese

Directions

On a large plate, make a bed of lettuce, and then chop up the rest of the lettuce and neatly arrange it with all  the other ingredients side by side. This salad really goes well with a piece of corn bread, but of course that is optional.

As for the dressing, I used some honey mustard, and drizzled some lemon juice and olive oil over it. You can use your favourite dressing!
